We made the most delicious treat last week – Watermelon Slushies!
Watermelon is one of my favorite summer fruits. Hydrating and sweet, it’s perfect any time of the day. And it’s nutritious. High in sugar, yes, but it is also high in lycopene which helps prevent heart disease and some cancers.
Watermelons are good go-to for a summer party, but when you buy one for just your family, it can be a lot to eat before it starts to go bad. So what to do? Freeze it! We ate about half the watermelon last week and then I put the rest of the cubed watermelon in the freezer. The next day I put it in a blender and made these delicious slushies!
Ingredients: Frozen Watermelon.
That’s it! No need to add sweetener or anything else. Just process in a high-speed blender until the desired consistency. The longer you process, the thinner and slushier it will be. If you prefer to eat it like a sorbet, then process less. Word of warning, this does take awhile to process (even in my Vitamix) so be patient! It’s worth it.
