You know how ravenous you are when you come out on the other side from the flu?  That’s how I felt last night.  Barely eating for 24 hours can do that to you!  I was craving pizza, but I didn’t have any good pizza dough on hand.  First I thought – delivery – why not?  I never get delivery, so this was the perfect excuse.  Until I put in my online order at the local pizzeria with high-quality ingredients and got to a $38 total (and that was before delivery charges).  Couldn’t do it.  And I knew I could make a quick pasta dinner that would hit the stop.  Here’s what I did:

I threw these veggies in a sauté pan:

  • 1 diced yellow onion
  • 1 package sliced mushrooms
  • About 2 cups chopped spinach
  • 2 small tomatoes, diced
  • 1 tsp salt
  • Freshly ground pepper

With the water from these vegetables, there was no need to add extra oil.

Boiled pot of water and added:

  • 2/3 package of organic brown rice pasta

For the sauce, I added to a saucepan and heated over med-low:

  • 1 ½ cups cashew cream
  • 1 large garlic clove, minced
  • 1 tsp salt
  • Freshly ground pepper

Once the pasta and veggies were done and the cashew cream was hot, I stirred everything together in a large pot.  It was delicious!  And done in under 20 minutes.  My kids loved it, my husband loved it, and I was happy to have made a quick, healthy dinner from ingredients I had on hand instead of dropping $40 on pizza delivery.

Artichoke hearts and kalamata olives would have been delicious in this dish too, but I didn’t have any.  As always, use what you’ve got!  You can’t mess up pasta with cashew cream. . .
