peanut butter cookie

Here is my take on my husband’s favorite Peanut Butter Blossoms!  I used to make these every year, but since I’ve stopped using white flour and sugar, they have taken a hiatus for a few years.  This year they’re back!  After a couple batches, I’m loving the result.  Here it is:


  • 1 cup organic peanut butter (I like Trader Joe’s no salt-added)
  • 2/3 cup coconut palm sugar
  • 1/4 cup water
  • 2 tablespoons organic unsweetened applesauce (again, Trader Joe’s has a good one)
  • 2 teaspoons vanilla extract
  • 2/3 cup oat flour (I make my own from rolled oats)
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • Dark chocolate candy bar pieces or chocolate chips


  • Preheat oven to 350 and line baking sheets with parchment paper
  • Mix peanut butter through vanilla extract until well blended
  • Sift dry ingredients together
  • Slowly add dry ingredients into wet and mix to combine
  • Roll tablespoons of dough into balls
  • Flatten each ball on baking sheet with a fork
  • Bake for 7-9 minutes
  • Remove from oven and quickly push chocolate pieces into each cookie
  • Move to a cooling rack and cool completely until chocolate is set
  • These will last longer if stored in the refrigerator

My husband thought these tasted just like his memory of Peanut Butter Blossoms even though they don’t look the same.  Of course my kids love these and just asked tonight if we could make them again!  Enjoy!
