Peanut Butter Banana Hot Chocolate Smoothie. Delicious!
My kids played outside in the snow after school today. When they came in for snack, they wanted Banana Ice Cream. But they had red cheeks from the cold. How can you eat ice cream when it’s freezing outside?
So, I wanted to try a healthier version of hot chocolate and ended up with a smoothie of sorts. A warm smoothie. Sounds a little odd but it was really yummy and my kids loved it. All three gave it ‘definitely make again’ status.
Ingredients for 2 servings or 3 child-size servings:
- 1 banana
- 2 medjool dates, pitted
- 1 1/2 cups almond milk
- 1 tablespoon peanut butter
- 2 tablespoons carob powder (or use cocoa or cacao powder)
I used the hot soup setting on my Vitamix, but you could easily combine all ingredients in a blender and transfer the mixture to a pot to heat until warmed.
Add another 1/2 cup of milk if you want the consistency to be closer to hot chocolate. 1 1/2 cups of milk definitely give you a smoothie consistency.
Feel free to change up the sweetener and use stevia, brown rice syrup or honey in place of the dates.
Almond butter would also be equally delicious and an easy swap for the peanut butter if you prefer.
