The girls wanted to know what ‘special snack’ I had planned when I got them from the bus stop this afternoon. Ummmm, nothing planned here.
Looking in the refrigerator, I saw we had some apples and remembered a snack I had seen somewhere. . . I can’t recall where, but I’m pretty sure someone made sandwiches out of sliced apples.
So, I gave it a try. As I was making them, Amelia said, ‘Mom, are you making apple doughnuts?!!?’
Why yes I am!
I used an old vegetable peeler and a knife to core the apple.
I’m sure there is a better way to do this. As you can see after I sliced the apple, I pretty much butchered it. Luckily for me, my kids don’t care about appearance!
I spread each apple slice with peanut butter and topped with raisins. You could easily swap out Sunbutter or Almond Butter instead.
My kids thought these were fantastic. All three of them. Yea Mom! And do I even need to mention how much better these are for your kids than real doughnuts?
