We have so many tomatoes from our garden. I don’t know what to do with them all! I have been making fresh salsa every couple days, and last night, I made tomato sauce for the second time in a week. This is great for pastas or pizzas.
Add onions, peppers or seasonings to your liking. It’s amazing how easy it is to make tomato sauce. And you can avoid the added sugar and salt that is overdone in most store-bought brands.
To make my version:
- 3 tomatoes, pureed in a blender (I used my immersion blender)
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 garlic clove, minced
- 1 tablespoon dried basil (use fresh if you have it!)
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
Heat all ingredients in a saucepan and simmer 30-45 minutes, until desired consistency. The sauce will continue to thicken and reduce as it cooks.
