These are one of my favorite treats. . .and one of my kids’. If you’ve tried Larabars before, you know how delicious they are. I love that the ingredients are simple and pure. No crazy additives that I can’t pronounce. However, they can get expensive. Thankfully they are so simple to make at home!
I like to make these for a snack for my kids. They will be perfect for after school, and they pack well to take in the car between sports and other activities.
Dates are one of my favorite sugar alternatives. Dates are high in sugar like all dried fruit, but they also contain fiber and nutrients so your blood sugar doesn’t spike like it does with refined sugar. I buy my medjool dates in the bulk section of my co-op, but I have also bought them at Trader Joe’s. They don’t seem to be as soft and fresh from Trader Joe’s but you can definitely still use them. You may want to soak them in warm water for 20 minutes or so first to soften.
2 cups medjool dates, pitted
½ cup raw cashews
½ cup raw walnuts
¼ tsp vanilla
Pinch of sea salt
Place ingredients in a food processor or blender. I use my Vitamix.
Pulse until nuts are chopped into small pieces and mixture starts to clump together.
Form mixture into Bites and store in an airtight container.
Because the mixture is so sticky, you may need to wash your hands a few times as you form the Bites.
I like the simplicity of this recipe (they really taste like cookie dough!), but variations would be to use different nuts (almonds, peanuts), raisins or dried cherries in place of some of the dates, and adding in dark chocolate, coconut or other favorites.
