I made this for my kids for a healthy dessert last night in honor of Valentine’s Day. . . it was delicious!

I got the idea from the this recipe for raspberry cream-filled chocolate candies.  Some day, I will definitely be trying those!  I didn’t have time to make those, but the filling seemed super easy and sounded like a yummy dessert on its own.

I used strawberries instead of raspberries because I had a bag of frozen organic strawberries from Trader Joe’s on hand.

Here it is!

Thaw 1 12-ounce bag of strawberries.

Soak 1/2 cup raw cashews for a couple hours.  Put cashews in a bowl and cover with water.  Cover and refrigerate.

In a blender, combine:

  • Thawed strawberries
  • 1/2 cup raw cashews (soaked and drained)
  • 1/2 cup medjool dates, pitted
  • 2 tablespoons chia seeds
  • 2 teaspoons lemon juice
  • Pinch of salt

Blend until smooth.

Refrigerate to thicken.

Serve with dark chocolate shavings!  (My son’s favorite part!)
