This is the perfect dessert to share with the special people in your life. With Spring and Mother’s Day, I think Lemon Bars. Of course, your classic lemon bar is made with tons of sugar and flour and all that stuff that I try to avoid.
Especially coming off of my kids’ birthday . Eeks, the sugar overload. Having three kids celebrate a birthday meant: Cheesecake at their birthday dinner out, Cookie cake for my son, Bakery cakes for each of my daughters, Ice cream sundaes with the grandparents…
Even my husband said, who are you?! He couldn’t believe all these sugar-filled treats made their way into our house.
Time for a healthy dessert to balance us back out! While I’m not tempted by all the junk, my kids definitely enjoyed it. 🙂
Our typical everyday treats are still really good, they just come in healthier forms.
While these might not LOOK like lemon bars, they taste exactly like them!
I used Lemon Essential Oil in this recipe because: A) I had no lemons B) lemon essential oil is just so darn convenient C) 5 drops of lemon essential oil is super inexpensive (5 drops costs me about 20 cents!), and D) the concentrated lemon essential oil provides big-time cleansing benefits for your body.

This recipes uses medjool dates. I know what you’re thinking. What is that?! Stay with me… These amazing dried fruits are the secret to healthy, naturally-sweetened desserts. Like all dried fruit, they are concentrated sugars, but they also have fiber, vitamins and minerals.
Here’s the package of dates I buy at Costco. They last in the fridge for a loooong time.
If you can’t imagine buying 2 pounds of dates, no worries! You can buy just a few in the bulk section of most grocery stores. Just avoid the packaged ones in the baking aisle… they usually have added sugar, and we don’t need that!
Healthy Lemon Bars
- 2 cups medjool dates, pitted
- 1 cup raw almonds
- 1/2 teaspoon vanilla
- pinch of sea salt
- 5 drops doTERRA LEMON essential oil
Pulse all ingredients in food processor or blender until dough-like.
Roll into bite-sized balls, or make square bars by pressing dough into a parchment-lined cake pan, refrigerate for a few minutes, and cut into squares.
Refrigerate for up to 2 weeks.
