The tomatoes in our garden are finally starting to ripen! I used the vegetables from our garden to make a delicious fresh salsa. So good in fact, we ate the entire huge bowl in one evening. I loved dipping cucumbers in it (we still have SO many cucumbers, I’m eating them as fast as I can!), and of course, organic corn tortilla chips.
I will be making this salsa over and over while I can get fresh vegetables. It is so much better than jarred salsa, you can’t even compare the two.
Ingredients:
- 4 tomatoes, diced
- 1 bell pepper, diced
- 1 yellow onion, diced
- 1 jalapeno pepper, finely diced, seeds and ribs removed
- 2 handfuls cilantro, chopped
- Juice of 1 lemon (or lime)
- Sea salt to taste
- Freshly ground black pepper
Mix all ingredients in a large bowl. Then try to keep from finishing the whole bowl!
