Need a snack or lunch that takes literally minutes to prepare but is exciting to eat? Try this one! My kids think these roll-ups are so fun, and it is an easy way to get a lot of vegetables into a snack. Of course change up the veggies with anything your kids like (I usually use red or yellow bell peppers as well but I didn’t have any this time). Other filling ideas would be sliced olives, lean meats, or even fruit.
Ingredients for 1 lunch-size serving:
1 whole wheat or gluten-free tortilla
1-2 tbsp prepared hummus
Carrot, peeled or sliced into thin strips
Cucumber, peeled or sliced into thin strips
A few mushrooms, sliced
¼ avocado, sliced thin
(Ideally ¼ red bell pepper, sliced thin)
To assemble:
Spread hummus onto tortilla.
Arrange filling ingredients in strips on the tortilla, keeping at least 1 inch on each side.
Roll tortilla (the way the vegetables are length-wise).
Slice about 1-inch thick pieces and fasten each piece with toothpicks.
My 5-year olds are fine with toothpicks, but use your discretion when serving food with toothpicks to kids. . .
I plan to serve this as a snack when my kids have after-school activities that will require dinner to be later than usual. You could also pack these in a container for lunch (if packed tightly, they will stay together fine with no toothpicks.)
