I don’t eat dairy.  I figured out by about my early twenties that dairy and I did not get along.  At that time, I switched to Lactaid or Soy milk and ate cheese and ice cream only if I was willing to suffer a bit.  Now, after the research I have done, I have concluded that a lot of dairy doesn’t support my health, so I have given it up completely.  Which only means less upset stomachs. . . .because let me tell you, there are so many fantastic dairy alternatives, your taste buds won’t miss it!

I’m not a fan of processed ‘fake’ cheese, so I make my own from nuts and seeds when a recipe calls for cheese.  One of our go-to’s for pizza and salads is cashew cheese.

Recipe:

  • 3/4 cup raw cashews
  • 1/4 cup water
  • Juice of 1/2 lemon
  • 1/2 tsp salt
  • Small garlic clove, minced (optional)

Place all ingredients in food processor and process until well-blended.  Add more cashews or more water to achieve desired consistency.  When I use this on pizza or in salads, I like the cheese to be thicker.  If I am using cashew cheese in place of a cheese sauce, I will add more water for a thinner, spreadable cheese.
